BEANS AND SWEETCORN QUESADILLAS

Hey there,

 Quesadillas are on my mind today and not just simple ones but beans and sweetcorn quesadillas, perfectly spiced, full of flavour and can be whipped up real quick. I ended up refrying my own beans but if you have a favourite brand then you can use that. I usually like my beans to have a bit more texture, not thoroughly mashed and to have a bite too. Quesadillas just have a way of making one happy when it comes to indulging, I mean a tortilla, great filling and cheese and you have yourself, one happy person. Honestly, quesadillas were not something I grew up with and hence never made it to my menu. Nowadays, I ensure that I make some every two weeks with a change-up of ingredients of course. For this recipe, you will need;

BEANS AND SWEETCORN QUESADILLAS

Ingredients

  • Large Tortillas
  • 1tbsp olive oil
  • 1 chopped onion
  • 3 cloves crushed garlic
  • 1/2 a can of beans/ I used adzuki but black beans are fine too)
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 a tsp coriander
  • Chilli flakes (optional)
  • 1/2 a cup thawed sweetcorn
  • 3 tbsp water
  • Salt to taste
  • Chopped coriander
  • Juice of half a lemon squeezed
  • Grated cheddar cheese for the filling part ( Use cheese of choice)
  • Butter for pan frying

METHOD

  • Olive oil in a preheated pan, add your onions and sweat then for a few minutes.
  • Then add your garlic and stir once again, add your beans and give a good mix for a few minutes.
  • Then some cumin, paprika, coriander and chilli flakes.
  • Stir to mix your beans and the spaces while squishing them a bit with your spoon.
  • Then in goes your sweetcorn and stir to combine.
  • Add water and let it cook for a few minutes, season with salt to taste and finish with some coriander and lemon juice.
  • Stir to combine a set aside to cool a bit.
  • Start assembling them with a tortilla first, some cheese, your bean mixture and then fold to seal.
  • Add your butter to a preheated pan and let it melt. Start frying your quesadillas ensuring you press the sides in order for the cheese to melt and seal.
  • Once both sides are perfectly brown, they are done.
  • Cut them up and plate them.
  • Serve and enjoy.

How to freeze them.

They freeze pretty well too and all you have to do is wrap them in aluminium foil, into a sealable bag and freeze for future use. When you need them, thaw them until they reach room temperature and into the oven to slightly warm for just 5 to 10 minutes.

There you go, some delicious beans and sweetcorn quesadillas for you to indulge in. The spices in this make them have such a great flavour and if you’re all for more heat, then don’t skimp on the chilli flakes.
