ONE POT SAUSAGE AND PASTA RECIPE

Busy evenings, who doesn’t love them, right? Anyway just joking. If you’re like me and tend to end up rustling up dinner while still thinking of how many million things you still have to do before the day ends, then this one-pot sausage and pasta recipe is one to have on hand. All in one pot, no need of cooking the pasta beforehand and packs a punch when it comes to great flavour. Depending on what kind of sausage you like using, you can pick your favourite but if you can find kielbasa, then I suggest you use that. The last addition of cheese brings this dish altogether and adds a creamy texture that will not disappoint. For this recipe, you will need;

ONE POT SAUSAGE AND PASTA RECIPE

Ingredients

  • Uncooked pasta (75gms person)
  • 1 tbs olive oil
  • 700gms of kielbasa chopped up
  • 1 onion
  • 3 cloves garlic
  • A thumb of ginger
  • 1/2 a teaspoon each for paprika, cumin and coriander
  • 1tsp Italian seasoning
  • 2 tomatoes
  • Tsp tomato paste
  • 3/4 cup milk
  • Chicken stock to cover
  • Salt and pepper to taste
  • A handful of cheddar cheese.

METHOD

  • In a preheated pot, add your olive oil and sausage and let them fry up for a few minutes.
  • Then add in your onions and stir for 2-3 minutes before adding in your garlic and ginger.
  • Once they are all combined, go in with your spices and give it a good stir and let them cook for a few minutes.
  • Then in with your chopped tomatoes and let them soften as you stir which can take 3 minutes.
  • Then your Italian seasoning and give it a good mix, add your tomato paste and stir once again.
  • Add your uncooked pasta give it a stir and in goes your milk and chicken stock just to cover the pasta.
  • Stir and cover and let it come to a boil then reduce the heat to a simmering level.
  • Halfway through season to taste with salt and pepper, stir and cover again to let the pasta cook.
  • Once the pasta is at the aldente stage, add in your cheese and let it finish cooking.
  • Finally, finish off with some chopped coriander and that’s it.
  • Serve and enjoy.
