HOW TO MAKE COCONUT MANGO PANNA COTTA

I hope you’re all having a great day today. I am back with a recipe for you on how to make coconut mango panna cotta. This one right here is one pretty dessert and perfect for entertaining too. Since the warmer weather is starting to leave us, one last summery dessert won’t hurt. Both flavours complement each other really well and just makes it look and taste incredibly tropical, making you want a vacation real bad. This is a recipe you would need to start a day to two ahead since you would need to let the first layer set first before adding the second layer, but don’t worry because it’s totally worth it. I also served them in wine glasses but if you have clear ramekins, that would be great too to be able to appreciate the layers. Okay, onto the recipe now. You will need;

HOW TO MAKE COCONUT MANGO PANNA COTTA

Ingredients

  • 400mls can of coconut milk
  • 2 sachets of gelatin
  • 1/2 a cup double cream
  • 3 tbsp sugar
  • 1 tsp vanilla extract
  • 1/2 a cup of water
  • A bowl of chopped ripe mangoes (2/3 mangoes will be fine)
  • 2 tbsp sugar
  • Strawberries for garnish (optional)

METHOD

  • Pour half a can of coconut milk in a bowl, a sachet of gelatin and set aside to bloom.
  • Meanwhile, in a saucepan, pour the rest of the coconut milk and half a cup of double cream, sugar and onto the heat and stir until sugar dissolves.
  • Don’t let it boil but just simmer, then off the heat and add in your vanilla extract and stir once again.
  • Stir your gelatin and pour into your warm mixture and stir until dissolved.
  • Pour into a jug once cooled and into your glasses, making sure they are all equal and level.
  • Cover with cling film and refrigerate to set, preferable overnight.
  • Pour half a cup of water in a bowl and another sachet of gelatin and once again set aside to bloom.
  • Blend your mangoes to form a puree, you can add some water if too thick.
  • Then into a saucepan once again with sugar and stir to dissolve on moderate heat.
  • Then out of the heat and stir in your gelatin mixture once again.
  • Take out your previous glasses and pour in your mango mixture then cover with cling film and refrigerate to set again.
  • Once done, garnish with some sliced strawberries or not.
  • Serve and enjoy.
