POTATO AND SALMON FISH CAKES

I hope you all had a lovely weekend and that it’s going on fine, I always publish my posts on Tuesdays but this week will have to just understand that I couldn’t publish a post-half-written. Now, I am all for having what’s on my menu every week and since I change it every two weeks, I never mind repeating a dish but when you have the same thing for four weeks in a row, it becomes too monotonous and I blame my busy schedule for that. So this past week, I finally got to change my menu and instead of the same old oven baked garlicky salmon, I decided to do something different and make some potato and salmon fish cakes. These are also great if you have a picky eater and need to include some veggies or some meats into your meal. You will need;

Ingredients

  • 3 medium sized potatoes
  • 500gms salmon
  • 1 small chopped onion
  • A bunch of coriander
  • 2 eggs
  • All-purpose flour
  • Salt to taste
  • Tsp paprika
  • A tsp mixed herbs
  • Black pepper to taste
  • Garlic powder
  • A lemon
  • Bread crumbs
  • Vegetable oil

METHOD

  • Peel your potatoes, wash them and put them to boil until they are well cooked, you can test if they are ready by pricking a knife through one of them.
  • Meanwhile, preheat your oven to 180°C, put your salmon in a baking dish and in the oven it goes for around 15-20 minutes
  • Once salmon is done, peel away from the skin and chop into smaller pieces, you don’t have to make them perfect.
  • Mash your potatoes and ensure it’s smooth, then scoop half of the potatoes into your salmon and give it a good mix, then finally add the rest and mix again.
  • Then in a sauce pan, pour a tablespoon of oil and cook the onion for a few minutes then add a teaspoon of garlic powder, paprika and finally stir then your lemon juice and finally your chopped coriander.
  • Pour into the potato and salmon, salt and black pepper to taste. Into the fridge to firm up for 15 minutes.
  • Make your patties, I ended up making 9 patties with my mixture but it all depends with the size you decide to make them.
  • Place them in the fridge for half an hour for it to be easier when it comes to breading, but if you are in a hurry then you can continue.
  • Now comes the breading, take three bowls and put in the flour, eggs and breadcrumbs respectively.
  • One by one, start by putting your patty in the flour, then egg and finally in the breadcrumbs. Once you have breaded all of them, you can put them back in the fridge again for 30 minutes.
  • In a frying pan, pour in a tablespoon of oil and start frying your patties letting them brown evenly on each side.
  • Prep your salad whichever you choose.
  • Serve and enjoy.

Note: You can also use cod if salmon is not your preference, also you can use parsley instead of coriander, it’s your choice and either way they will still be delicious. They also go great with a dip or a side of kachumbari.

  26. Great recipe! There’s no Salmon available where we live, but I tried with a local fish (not cod) and it was still delicious! Vegies helped! So I think there could be more than a few types of fish to substitute here!
