EASY VEGETABLE FRIED RICE

Hi There,

As a busy mum, I try to figure out what is the quickest and fastest meal I can be able to prepare and still make time for my almost 6 month old and 5 year old. Now, I don’t really make fast meals everyday but there are days when I literally can’t think of anything else to cook without it having too many steps. So when that time comes, my easy vegetable fried rice hits the spot and is ready in minutes compared to my beef pilau recipe or the salmon fish cakes. Also my son really loves it and always eats it with a side of oven baked salmon which will come next on the blog later on. Today, we will be focusing on the fried rice part. So, you will need:

EASY VEGETABLE FRIED RICE

Ingredients;

  • Pre-cooked rice
  • Knob of butter
  • Olive oil
  • Frozen vegetables
  • Light & Dark soy sauce
  • Garam masala
  • Garlic Powder

Method

  • In a pan, pour in a tablesoon of olive oil and the knob of butter.
  • Then in go your onions and sweat them for a while.
  • Next comes a dash of garam masala and garlic powder.
  • Stir that for another five minutes, then go in with your frozen vegetables.
  • After giving your veggies another stir, prepare you pre-cooked cold rice and pour it in.
  • Mix it up well and pour in some light soy sauce and stir once again.

EASY VEGETABLE FRIED RICE

  • Then later on pour in some dark soy sauce, which I usually use for the sake of colour and adds a punch too.
  • Once you stir that again, you are done.
  • Serve and enjoy.

Note: I used frozen veggies, because they are usually pre-cooked and doesn’t take that long to cook, also I don’t add any salt to the dish because the soy sauces take care of that. Also, you might have noticed that my fried rice has no eggs, that’s because I have a sensitivity to eggs so feel free to add in some if you want, and some chilli too if you prefer that.

  5. I have never tried making fried rice before because I am not really confident with the cooking times. I have just learned how to make risotto right. 🙂 Your recipe sounds pretty simple though, maybe because you are using pre cooked rice.
