When I used to make roasted chicken, it used to have a mind of its own and either overcook or just turn out wrong but after multiple tries, I finally found my way of making the tastiest chicken and the best part is, the oven does all the work for you. SIMPLE PORK STIR-FRY RECIPE

Hello Everyone

I hope you all had a lovely weekend and got to plan for your week ahead. As for me, It was yet another trip to the grocery store and finally got to change my menu, which I normally do after two weeks or switch up some meals once they have become too much for my picky little eater. My son loves noodles and I mean really loves them and so every week, it has to be on the menu and it’s the only meal that never changes.

I usually change the meat we eat it with once in a while but so long as it’s noodles, my little boy is happy. My husband is more of the seafood and no sweet sauces type of man, and when I make my son’s meal, I change few things when finalising the meal to make it a bit different. There are very many blogs every where and it all comes to the name. I chose my blog name using my name because I am not planning to change it at all and that’s who I am but if you want to have something more do it and make sure you will still love it 3 years down the line. You should also know that the name you have chosen may already be taken and that’s why this second step has to do with a lot of thinking and re-thinking. Once you have found your blog name, you need to find your self a web host.

This week I forgot to specify what kind of meal I was going to cook since my menu only said a rice dish, this is due to my son being a picky eater and loving one thing today and hating it the next day, very normal by the way. So the only meat I had was chicken and decided to make chicken tikka masala. MY KACHUMBARI RECIPE

What’s Kachumbari?

Better known as salsa fresca or pico de gallo depending on where you grew up, we call it kachumbari in Kenya.It’s one of those dishes that can go with anything and just makes me happy. Once you combine it with more spices, you can make it to be your own or even add some meat and other ingredients to make a proper salad. Hope you get to love it as much as I do. For my kachumbari recipe, you will need

Ingredients

  • 2 onions (red or white)
  • A couple of tomatoes
  • Raw chillies
  • 1 lemon
  • Pinch of salt and more for the onions
  • A bunch of coriander

METHOD

  • Chop your onions into small pieces and put them in a bowl, pour some water to cover them and add in two tablespoons of salt. (This helps in removing the sharp taste of onions) and place them aside.
  • Slice up the tomatoes and place them in another bowl along with the chillies also chopped into small pieces.
  • Put a pinch of salt and mix them together.
  • After about ten minutes pour the onions into a sieve and run some water through them to rinse out the salt.
  • Put the onions in the bowl with the tomatoes and mix them up, at this point the colours already start making you smile.
  • Squeeze one lemon and mix it up again, then chop up the coriander and add that in too.
  • Now from this point, you can be done and place it the fridge to chill out or you can add some more stuff and make it your own.
  • I usually add some olive oil black pepper or even some grated carrots either way it will be delicious.

So that’s it my kachumbari recipe and for a quick tip, crush up an avocado mix it in and there you have some guacamole and eat with some chapati on the side, recipe here. Serve and enjoy, do try this out and tell me if you loved it, what do you call this where your from?
