NO BUTTER ORANGE LOAF CAKE

I am not that much of a sweet tooth person but that doesn’t mean I can’t indulge once in a while. I also just realized I am allergic to egg whites which is a bummer since some of the things I like have eggs in them. Anyway, I am still able to handle some meals with a bit of egg but not all. That means goodbye to fluffy pancakes and meringues are a no-go zone for me. All in all, I shall overcome it one way or another, enough about me, today I have the best dessert you could want and it’s this no-butter orange loaf cake. I hope you are ready for this, for the recipe you will need;

Ingredients

  • 1¼ cup all-purpose flour
  • ¾ cup granulated sugar
  • 1¼ tsp baking powder
  • 2 large eggs
  • ½ a cup of vegetable oil
  • 150 ml freshly squeezed orange juice( I used the ones I zested)
  • Zest of 3 medium oranges
  • Tsp vanilla extract

METHOD

  • Preheat your oven to 160° fan-assisted oven/180°C conventional oven/350°F
  • Sif your flour and baking powder and set aside.
  • Then in another bowl beat your eggs and sugar until light and fluffy, you can use a handheld mixer.
  • Be patient when it comes to these two, it took me 3 minutes.
  • Then slowly, pour your oil while still whisking to combine.
  • Then add your orange juice, zest and vanilla extract and beat one again.
  • Now it’s time to combine the dry to wet ingredients.
  • Gently fold in your flour with the egg mixture until well combined.
  • Into a well-greased loaf tin and in the oven for 40-50 minutes until clear when pricked with a toothpick.
  • Once done, let it cool for a few minutes in the pan before turning it over.
  • Lightly sprinkle some icing sugar at the top, and slice up.
  • Serve and enjoy.
