SPINACH AND FETA PUFF PASTRY APPETIZERS

Let’s Talk Puff Pastry,

I am a sucker when it comes to convenience and puff pastry is one of those ingredients that just screams convenience to me. I don’t make my own because I don’t really have that time but a full butter store-bought one always does the trick. If you’re in need of some ideas on what to do with some puff pastry you have in the fridge, then these spinach and feta puff pastry appetizers are the ones to try. Did I also mention how simple they are to prepare? Brace yourself then. For this, you will need;

Ingredients

  • Rolled-out puff pastry
  • 3 slices of bacon
  • 240gms spinach
  • 3tbs water
  • 150 gms softened cream cheese
  • 100 gms feta cheese
  • An egg
  • Tsp garlic granules
  • A tsp mixed herbs
  • Salt to taste

METHOD

  • Place your bacon in a baking tray and bake until nice and crispy.
  • In a microwaveable bowl, add your spinach and microwave for 2 minutes.
  • Remove and let it cool for a bit, give it a stir to let it wilt properly.
  • In another bowl, mix your cream cheese and egg until well combined.
  • Then add your garlic granules and mixed herbs and give it a good mix once again.
  • Strain your spinach by using a sieve and pressing to remove excess water.
  • Chop up your crispy bacon into small pieces.
  • Then chop p your spinach and into a bowl with the bacon.
  • Add crumbled feta, salt to taste and the cream cheese mixture.
  • Give it a good stir until well combined.
  • Spray/ grease cupcake trays.
  • Preheat your oven to 200°C fan assisted oven/220°C conventional oven/424°F
  • Take your rolled-out puff pastry and stretch it out a bit using a rolling pin.
  • Cut it lengthwise into 3 sections.
  • Then horizontally to form 12 squares.
  • Press our squared shapes into the trays gently.
  • Scoop out your mixture and divide equally.
  • Then fold in the corners lightly to close and into the oven for 20-25 minutes.
  • Until golden brown, remove onto a rack to cool.
  • Serve and enjoy.
