Hiya my people,

I hope you all had a fab weekend. Today I have another recipe for you and since I have been loving desserts a whole lot more lately, this simple lemon loaf cake was on the menu. I didn’t get to have it with the custard I had in my mind but feel free to add in yours when serving. I hope you do get to try it and I also have a video at the end of the post to show you all the steps, if you missed my previous recipe do check it out here. You will need:

SIMPLE LEMON LOAF CAKE

Ingredients

  • 125 gms Flour
  • 75 gms Butter
  • 75 gms Sugar
  • 1/2 teaspoon Baking powder
  • 2 eggs
  • 2 tbsp milk
  • 1 Grated lemon rind

For infused syrup

  • 2 Tbsp sugar
  • Thyme leaves
  • 1/2 Lemon juice

NOTE: You can double the recipe to make a bigger loaf cake, I just needed a dessert for the evening, also I would suggest you pour in the syrup when the cake is in the tin if you lined it with grease proof paper, to make it easier to remove and not to loose any of the delicious infused thyme syrup. Remember to make sure it’s cooked through by testing with a knife or cocktail stick and if you pierce and they come out clean then you are good to go.

That’s it, I have given you the most delicious, moist and fast lemon cake that you will have. I know it can also be good if it had some icing but once you have this when it’s just lukewarm with a cup of tea, you will know why you don’t really need any.
