How are you all doing today? I hope your week is getting on just fine and staying safe as always. Today I have for you one of my favourite childhood recipes and brings back great memories. Not only did I have this when younger but even now I would still have them anytime when the craving decides to check-in. Now I do know there are different versions of this recipe and other names like “viazi karai” but I am sharing what I know and how I remember them. My  Kenyan potato bhajia recipe is what I am talking about, flavourful, spicy and so delicious if I say so myself. You can easily order bhajia in many restaurants in Kenya and they will either come with some ketchup or my other favourite, a tamarind dip which just takes them to another level. KENYAN MANDAZI RECIPE

Hey Guys,

Today I woke up with my day all planned out by going for grocery shopping then back home to relax. Usually, my son has a habit of deciding what kind of snacks he would like to have while in the store by picking up anything and saying “I want this”, but today I stuck to my guns and just said not today. By the time we got back home and he remembered he hadn’t seen his snacks, I destructed him with mandazis which I used to eat when I was small and really loved them and still do. This is my Kenyan mandazi recipe

What are mandazis?

Mandazis are bite sized dough formed snacks in Africa normally made to have with either tea, as a snack or for breakfast. In Mombasa, they make mahamri instead which is made using yeast and coconut milk and eat them with mbaazi which are pigeon peas made in a tasty coconut sauce. This is my mandazi recipe, you can add any spices you want while making them. For the recipe, you will need;

Hello Everyone,

Pilau is what is on my mind today, I love pilau and always brings back great memories. I try to put it on my menu all the time until my family starts asking for something different then I know it’s time to give it a break. Known for being an Indian or Middle Eastern dish, I got to try my first pilau when I was younger and I’m guessing that was the Kenyan version which I learnt to make and still do the same way I saw back then. MY KACHUMBARI RECIPE

What’s Kachumbari?

Better known as salsa fresca or pico de gallo depending on where you grew up, we call it kachumbari in Kenya.It’s one of those dishes that can go with anything and just makes me happy. Once you combine it with more spices, you can make it to be your own or even add some meat and other ingredients to make a proper salad. Hope you get to love it as much as I do. For my kachumbari recipe, you will need

Ingredients

  • 2 onions (red or white)
  • A couple of tomatoes
  • Raw chillies
  • 1 lemon
  • Pinch of salt and more for the onions
  • A bunch of coriander

METHOD

  • Chop your onions into small pieces and put them in a bowl, pour some water to cover them and add in two tablespoons of salt. (This helps in removing the sharp taste of onions) and place them aside.
  • Slice up the tomatoes and place them in another bowl along with the chillies also chopped into small pieces.
  • Put a pinch of salt and mix them together.
  • After about ten minutes pour the onions into a sieve and run some water through them to rinse out the salt.
  • Put the onions in the bowl with the tomatoes and mix them up, at this point the colours already start making you smile.
  • Squeeze one lemon and mix it up again, then chop up the coriander and add that in too.
  • Now from this point, you can be done and place it the fridge to chill out or you can add some more stuff and make it your own.
  • I usually add some olive oil black pepper or even some grated carrots either way it will be delicious.
