KENYAN MANDAZI RECIPE

Hey Guys,

Today I woke up with my day all planned out by going for grocery shopping then back home to relax. Usually, my son has a habit of deciding what kind of snacks he would like to have while in the store by picking up anything and saying “I want this”, but today I stuck to my guns and just said not today. By the time we got back home and he remembered he hadn’t seen his snacks, I destructed him with mandazis which I used to eat when I was small and really loved them and still do. This is my Kenyan mandazi recipe

What are mandazis?

Mandazis are bite sized dough formed snacks in Africa normally made to have with either tea, as a snack or for breakfast. In Mombasa, they make mahamri instead which is made using yeast and coconut milk and eat them with mbaazi which are pigeon peas made in a tasty coconut sauce. This is my mandazi recipe, you can add any spices you want while making them. For the recipe, you will need;

Ingredients

Makes 60 mandazis

  • 3 cups all-purpose flour or 600 grams
  • 150 ml of  lukewarm milk
  • 1 egg
  • 3 tablespoons of sugar
  • 1 1/2 teaspoons of baking powder
  • A teaspoon of allspice
  • Vegetable oil for deep frying

METHOD

  • In a bowl, mix all your dry ingredients together and then in a separate bowl, take your milk and crack the egg in it and mix them together.
  • Pour the milk and egg mixture into your dry ingredients and mix it to form a dough ball. Once you have done that, cover it with a cloth or foil to rest for ten to fifteen minutes.
  • After your time is up, take your ball of dough and divide it into two. Take one part onto a floured surface with a rolling pin and roll it into a big round circle or in my case sort of circle.
  • With a pairing knife, cut into vertical strips just like in my chapati recipe here, then take one vertical strip and cut it again into bite-sized pieces.
  • In a pan, pour in your vegetable oil and heat it up until it is very hot enough for a small piece of dough to start sizzling.
  • Gently drop your pieces one by one and make sure not to overcrowd the pan depending on the size of your pan.
  • Once they have browned on one side, turn them and keep an eye on them because they start cooking very fast.
  • They will rise up and swell a bit and some might burst but it’s ok they will just taste even better.
  • Once both sides have browned evenly, remove them an drain on a paper towel and continue with the rest.
  • When done, you can either decide to shake them in a mixture of sugar and cinnamon or just sprinkle them with normal icing sugar or just eat them the way they are.
  • Serve and enjoy.
