KENYAN MANDAZI RECIPE

Hey Guys,

Today I woke up with my day all planned out by going for grocery shopping then back home to relax. Usually, my son has a habit of deciding what kind of snacks he would like to have while in the store by picking up anything and saying “I want this”, but today I stuck to my guns and just said not today. By the time we got back home and he remembered he hadn’t seen his snacks, I destructed him with mandazis which I used to eat when I was small and really loved them and still do. This is my Kenyan mandazi recipe

What are mandazis?

Mandazis are bite sized dough formed snacks in Africa normally made to have with either tea, as a snack or for breakfast. In Mombasa, they make mahamri instead which is made using yeast and coconut milk and eat them with mbaazi which are pigeon peas made in a tasty coconut sauce. This is my mandazi recipe, you can add any spices you want while making them. For the recipe, you will need;

MY SPICY BEANS ON TOAST RECIPE

I did not grow up having beans on toast every day, but when we had it, Kenylon beans were the ones I remember and  were my best choice. I used to really love the tomato sauce in it, not too sweet but just right. That was until my sister decided to change it and I have been doing it this way ever since. The best part about this recipe is that you can get the ingredients anywhere and its very quick and easy to prepare if you don’t count chopping onions as a chore, then your sorted.This is my spicy beans on toast recipe, you will need;

  • 1 or 2 of your favourite can of beans (depending on the number of people)
  • Spring onions (five is fine)
  • Olive oil
  • Salt
  • Cumin
  • Garam Masala
  • Garlic powder or a clove of garlic
  • A thumb of ginger
  • Coriander(optional)
  • Hot sauce(optional)
